Easy Mocha Brownies

Ingredients

1/2 cup - (1 stick) unsalted butter
2 - (1-ounce) square unsweetened chocolate
2/3 cup - sugar
2 - eggs, beaten
1 teaspoon - vanilla
1/4 cup - all-purpose flour
1/4 teaspoon - baking powder
1/8 teaspoon - salt
2 teaspoons - ground coffee

Instructions

Preheat the oven to 325 degrees.
Butter and flour an 8-inch square pan. Set aside.
In the pot of a double boiler set over simmering water, melt the butter and the chocolate. Mix to blend and remove from heat.
Stir the sugar into the chocolate.
Stir the vanilla into the beaten eggs and whisk the egg mixture into the chocolate.
Whisk the flour, baking powder, salt and coffee into the batter.
Pour the batter into the prepared pan.
Bake the brownies for 35 minutes, until the center of the cake springs bake to the touch.
The brownies are best slightly warm or at room temperature.
