Peach Washington Cake

Ingredients

1 - sponge cake
1/2 cup - peach or raspberry jam
- Confectioner's sugar
2 cups - defrosted, sliced, and peeled peaches
2 cups - fresh raspberries, optional

Instructions

1. Cut cake into two equal layers.
2. Place the bottom layer of cake on a serving dish and spread with jam. Arrange peaches on top of the jam. Top bottom layer with the remaining cake layer and sprinkle with confectioner's sugar.
3. Slice and serve with washed and drained berries.

Tips

If you like, you can bake the cake from a mix, but this idea is even easier. Buy sponge cake, pound cake, or angel cake, then slice it, spread it with jam, sprinkle with sugar, and serve with fresh peaches and raspberries.
