Christmas MealsFilet of Beef with Mushroom | ||
Ingredients4 - 5 lb. - Filet roast (depending on how much meat you eat)6 large cloves - Garlic, slivered 2 tbs.. & 1tsp - Dry red wine 1 large - Yellow onion * 2 tbs.. - Unbleached white flour 1 lb. - Mushrooms (Shitake, Baby Portabellas, Button), cleaned 4 - Shallot bulbs, peeled and pulled apart 1/2 bunch - Fresh parsley, stemmed and chopped 1 tsp. - Dried oregano Pinch - Cayenne - Freshly ground black pepper, salt to taste, olive oil 1 - Lemon (for its juice) at room temp. InstructionsPreheat the oven to 425 degrees. Put the filet roast in a roasting pan. With a sharp small knife, cut 1/2� deep slits in the top and sides and insert a sliver of garlic down in each. Pour 2 tbs.. wine along the top of the filet, letting it run into the slits too. roast the filet 30 minutes. Grate the onion and by hand blend in 1 tsp. of wine, freshly ground black pepper, salt to taste and the flour 1 tbs. at a time to make a lumpy looking paste. Do not use the second tbs.. if you don�t need it. remove filet from oven, coat the top with the onion paste and add the peeled cippolini onions to the pan. Continue to roast 20 to 40 minutes, until filet is cooked (rare to well done) to your liking. Let it rest on the counter at least 5 minutes before serving. While on the second round of roasting, lightly coat the bottom of a small skillet with olive oil ( use a brush or paper towel perhaps ) and heat on medium. Add the shallot, cloves and saut? until soft. Slice mushrooms and add, stirring with a wooden spoon to mix. Add oregano and cayenne and lower heat. Saut? for 5 minutes. Remove from heat. Season with freshly ground pepper, salt and the juice of two lemon wedges. While still hot, stir in the fresh chopped parsley. Cover to keep warm till ready to serve. Serve the slices of filet in the center of a platter with a wreath of mushrooms around them, garnished with the small onions as though they were ornamental balls.
