This light and healthy fish dish is festive and has a marvelous flavor. The spinach and tomato is lightly accented with basil and orange for a wonderful main course. Serve with rice or pasta and steamed carrots for a quick and easy dinner. Ingredients4 - 5 lb. - Filet roast (depending on how much meat you eat)6 large cloves - Garlic, slivered 2 tbs.. & 1tsp - Dry red wine 1 large - Yellow onion * 2 tbs.. - Unbleached white flour 1 lb. - Mushrooms (Shitake, Baby Portabellas, Button), cleaned 4 - Shallot bulbs, peeled and pulled apart 1/2 bunch - Fresh parsley, stemmed and chopped 1 tsp. - Dried oregano Pinch - Cayenne - Freshly ground black pepper, salt to taste, olive oil 1 - Lemon (for its juice) at room temp. InstructionsPreheat the oven to 400 degrees. Lightly grease a medium square casserole dish. Mix together the spinach, onion, garlic, basil and orange zest and press it into the bottom of the casserole dish. Top with the flounder fillets and sprinkle with salt and pepper. Cover with foil and bake for five minutes. Remove the foil and sprinkle with the diced tomato. Return to the oven and bake uncovered for about 5-7 minutes or until the fish is opaque and flakes easily.
