Savory Blue Cheese Flank Steak

A great entree served with steamed vegetables, and baked potatoes or pasta, this steak is flavorful and tender.

Ingredients

2 pounds - flank steak
1 tablespoon - olive oil
1/2 teaspoon - crumbled dried thyme
1/2 teaspoon - salt
1/4 pound - creamy blue cheese
1 tablespoon - sour cream
2 tablespoons - minced fresh parsley
1 - minced garlic clove
2 - minced shallots
pinch - freshly ground black pepper

Instructions

Preheat the broiler. Rub the steak evenly with the olive oil, thyme, and salt. Place the steak on a broiler pan and broil 3 inches from the broiler for two minutes. While the steak is broiling, mix together the blue cheese and sour cream until smooth. Mix in the remaining ingredients. Flip the steak over and grill for two minutes on the other side. Spread the steak with the cheese mixture. Broil for another 2 minutes, or until the meat is cooked to the desired doneness and the cheese mixture is bubbling hot. Slice the steak thinly and serve.
