Low Sugar Christmas Gummy Candy Recipe

  • Prep time: 15 mins

  • Cook time: 15 mins

  • Cooling time: 40 mins - 1 hr

  • Total time: 1 hr 10 mins - 1 hr 30 mins

  • Servings: 10 (approximately 150 gummies: 75 of each flavor)

Ingredients

  • Green (Lime) Gummy Trees

    • Nonstick cooking spray

    • 6 0.25 oz envelopes of unflavored gelatin

    • 1 0.3 oz package of sugar-free lime gelatin

    • 1/2 cup cold water

    • 2 Tbsp lime juice

    • 4 tsp sugar (or 2 (50-mg) packets Stevia)

  • Red (Cranberry-Cherry) Gummy Gingerbread Men

    • Nonstick cooking spray

    • 6 0.25 oz envelopes of unflavored gelatin

    • 1 0.3 oz package of sugar-free cherry or cranberry gelatin

    • 10 Tbsp cranberry juice (or tart cherry juice)

Special equipment: gummy molds, eye dropper tool for candy-making (optional)

Instructions

  1. Spray the molds with nonstick cooking oil spray and place them on a flat tray. (It doesn’t need to be oven-safe; the tray just makes it easier to transfer to the fridge to set).

  2. In a small pot, add the ingredients for the green gummies: gelatin, water, lime juice, and sugar. In a separate small pot, add all the ingredients for the red gummies: gelatin and cranberry juice. (If you only have one pot, you can do this one color at a time, rinsing the pot in between batches). Set over medium heat and whisk together until the mixture is melted and smooth. It should be warm, but not boiling.

  3. Fill the greased molds with the gelatin mixture, placing the green mixture in the tree mold and the red mixture in the gingerbread mold (or using the molds of your choice). It helps to use an eye dropper/ candy tool, especially if the molds are small.

  4. Let cool completely, about 20-30 minutes. Then transfer the trays to the refrigerator to fully set (about 20-30 minutes).

  5. Pop out of molds and enjoy!
