It's the most wonderful time of the year, and that means one thing: food. The holiday season always has us craving hearty and delicious meals, but often we forget the importance of incorporating fresh veggies into our daily diets. Fear not, because we've got you covered with an easy and scrumptious recipe for oven roasted vegetables that will have even the pickiest of eaters reaching for seconds.

Oven Roasted Vegetables Recipe

  • Prep time: 20 mins

  • Cook time: 40 mins

  • Total time: 1 hr

  • Servings: 4-6

Ingredients

  • 3 Tbsps butter, melted

  • 1 Tbsp maple syrup (optional)

  • 2 cloves garlic, finely minced

  • 1 tsp rosemary, finely minced

  • ½ tsp salt

  • 1 large sweet potato, peeled and cut into bite-sized pieces

  • 2 cups brussels sprouts, ends trimmed and cut in half lengthwise 

  • 2 cups baby carrots or regular carrots, chopped

  • 1 small red onion, large diced

  • For garnish: fresh rosemary

Instructions

  1. Preheat the oven to 425 degrees. Mix the melted butter and maple syrup together in a small bowl. 

  2. Add the garlic, rosemary and salt, then stir.  

  3. Add the vegetables to a cast iron skillet and arrange in a single layer. Drizzle the seasoned butter mixture over the vegetables then toss to coat.

  4. Transfer the cast iron skillet to the oven and roast the vegetables for 35-40 minutes until the vegetables are tender and browned. Flip halfway through roasting.

  5. Remove the cooked vegetables from the oven. Transfer to a serving dish and garnish with fresh rosemary. Serve.

Step 3

Add the vegetables to a cast iron skillet and arrange in a single layer. Drizzle the seasoned butter mixture over the vegetables then toss to coat.

Step 4

Transfer the cast iron skillet to the oven and roast the vegetables for 35-40 minutes until the vegetables are tender and browned. Flip halfway through roasting.
